This chick’n salad recipe also goes great with crackers and a must for hosting and entertaining. You can also meal prep this up for the week adding your favorite snacks on the side which is great for my hubby when he’s on the move and needs a grab-and-go healthy meal.


Mindful Chick’n by Sweet Earth Foods

is a plant-based, protein-rich chicken alternative that you can use to make delicious vegan meals. One of my favorites to make for lunch or for a light dinner is my scrumptious Mindful chick’n salad sandwich recipe. I add in a couple slices of avocado and a slice of violife cheddar cheese or Daiya provolone; throw some pretzel chips and grapes or apple slices on the side and I’m set for the rest of the day!

Ingredients

  • 1 package of Mindful Chik’n chopped finely

  • 1/3 cup organic, no sugar added raisins

  • 1/2 cup of chopped green onions

  • 1/2 – 1 tablespoon of Cajun spice (depends on your taste buds)

  • 1 cup of chopped celery

  • 1/2 teaspoon of black pepper

  • 1/4 cup of blanched slivered almonds

  • 1/4 cup of Veganaise

Directions

  • In a skillet, combine 2 tablespoons of olive oil, Mindful Chick’n and Cajun spice on medium high. Cook until chick’n is lightly charred.
  • In a separate mixing bowl, combine chopped celery, green onions, raisins and almonds I used these cute stainless steel IKEA measuring cup I found on Amazon . Add chick’n, add veganaise and black pepper and mix all ingredients thoroughly. You can place in fridge to chill and eat cold or serve warm.
  • Add a healthy size scoop of chick’n salad to your choice of bread. I like to use Dave’s Killer Bread 21 Whole Grains and Seeds, but feel free to use whatever bread you enjoy.

Notes

  • Add your choice of vegan cheese, sliced avocado and pair it with your favorite food medley and it’s ready to eat! You can also dress it with a slice of tomato, pickles and lettuce. The possibilities are endless!
