Quick & Easy Mindful Chick’n Salad Sandwich
I know I’ve posted this Mindful Chick’n salad recipe on my Instagram before but, I wanted to share the full recipe and other ways I enjoy eating it.
Now first off all, my hubby went to 4 different stores before he found any in stock. So when our local grocery store has them available we try to load up. I’d like to believe more shoppers are choosing healthier plant-based alternatives as meat replacements because the beyond meat is also always out of stock as well.

This chick’n salad recipe also goes great with crackers and a must for hosting and entertaining. You can also meal prep this up for the week adding your favorite snacks on the side which is great for my hubby when he’s on the move and needs a grab-and-go healthy meal.
Mindful Chick’n by Sweet Earth Foods
is a plant-based, protein-rich chicken alternative that you can use to make delicious vegan meals. One of my favorites to make for lunch or for a light dinner is my scrumptious Mindful chick’n salad sandwich recipe. I add in a couple slices of avocado and a slice of violife cheddar cheese or Daiya provolone; throw some pretzel chips and grapes or apple slices on the side and I’m set for the rest of the day!
